The Science

Three Findings That
Shape The Table.

The research behind every plate at GREYSTONE — Mediterranean patterns, plant-forward longevity diets, and the cellular effects of fasting.

Mediterranean Diet
A Mediterranean diet with extra-virgin olive oil or nuts was associated with about 30% fewer major cardiovascular events in a high-risk trial.
Estruch et al., NEJM, 2018 (PREDIMED, republished). High-risk population.
Blue Zone Diets
The world’s longest-lived communities eat predominantly plant-based diets rich in legumes, vegetables, and whole grains.
Blue Zones research; Adventist Health Studies, Loma Linda. Observational.
Autophagy
Autophagy — the cellular clean-up process that fasting is studied to stimulate — earned the 2016 Nobel Prize in Medicine.
Nobel Prize in Physiology or Medicine, 2016 (Ohsumi). Human longevity effects still being researched.
Taking It Home
